WHEW who’s done with sweet things and baked goods and we’re not even at Christmas yet 🙋😳 You might be saying to yourself, Lucia, hello, you LOVE sweet things and baked goods (is it obvious?) and then I’m all like, yes, I know I love sweet things and baked goods, but I go through phases, you know? 1-2 months where all I want to do is bake and then I’m all like SO ready for all things savory & cookery. You know? Ya know. We all know how this goes.
I know by the appearance of things these might just scream HIGH MAINTENANCE BREAKFAST but really, they’re not at all. Super easy-peasy. Pinky promise. I mean you just blend some fruity things together, pour it in a bowl, and top it with everything but the kitchen sink.
This is another one of those recipes that feels slightly ridiculous to post but oh-so necessary because who doesn’t like quick, healthy, stupid-easy breakfasts?! No friend of mine, that’s for sure.
Now, when I think of acai bowls, I think of summer and beaches and although neither of those things are happening right now, we can still make smoothie bowls, regardless of season or circumstance. Don’t let anyone or anything keep you from pursuing your breakfast dreams!
This recipe really is so super easy and magnificently delicious. I know you’ll love it. Summery foods like these are always good at pulling us out of the winter slump 🙂
In other news, what are you up to this weekend?! Fall classes at BYU are officially over which means finals are NEXT WEEK! Eek. This weekend will be filled with studying, cooking, a Christmas party or two, some shrimp pasta, and probably Cinderella. ALSO – I’m thinking that starting in January I might take a leaf out of How Sweet Eat’s book and start compiling a beauty favorites every month or so. I get a lot of questions about my hair and makeup and I’m a beauty product junkie and so maybe I’ll just unload all my materialistic thoughts on that next year?! Haha. Let me know what you think! 2 c frozen mixed berries
2 very ripe bananas, frozen
1 c water
1 c acai juice (I use Sambazon)
topping suggestions: unsweetened flaked coconut, granola, flax seed, chia seed, nuts, more berries, nut butter, pomegranate seeds, pear, clementines…the options are really endless
Throw all ingredients into the blender and blend until smooth. Pour into bowls, top with desired toppings, and serve immediately.
