Watermelon, Cucumber, & Feta Salad

I know what you’re thinking.

Okay, actually I don’t.

But I have a guess.

“LUCIAAAA you just started a food blog and the second recipe you post is like…not even a recipe?”

It’s okay, guys. I’m not actually crazy sort of. There is a method to this madness.

And yes…this really isn’t a recipe. I mean it is. How do we define recipe? A list of ingredients that lead to a really great edible ending? Yes, we’ll use that. That works. So we just, you know, throw these flavors together in random measurements and hope for the best?

This is the simplest, yummiest, springiest, summeriest salad ever and the flavor combinations – I can’t. Yes friends, I literally can’t even.

Watermelon and feta is a surprisingly AMAZING combination. The salty, tangy, crumbly cheese is a really great contrast to both the flavor and texture of firm, refreshing, and sweet watermelon. It’s great. The cucumber is there because…we all need more vegetables in our lives? Just kidding. Maybe. The cucumber, like the watermelon, is refreshing, but also quite neutral in flavor so it’s a great player on this plate. Then ya add a drizzle of olive oil & black pepper & it’s just like BAM, you know? Summer. Right here. You get to EAT summer.

Actually please don’t. I really do like summer. Except for the hot and sticky and sweaty part.

watermelon, cubed (in my salad I like to use just a little bit more watermelon than cucumber)

cucumber, cubed

a shake of feta cheese

a little drizzle of olive oil

a crank or two of fresh black pepper


Toss in a bowl, lay out meticulously on a square plate , YOU DO YOU.

    Gorgeous composition on the photos! Where did you get the idea to cube everything and lay out in a grid? Very creative.

      Thank you! I remember seeing a picture of a salad in a magazine that had everything cubed a long long time ago and wanted to replicate it!
