Salmon Fish Tacos with Avocado, Corn, & Basil Salsa + Feta

First. I want to thank each and every one of you for the absolute OUTPOURING of love on my last post. My goodness, I’m feeling blessed.

Ever since being so “public” a couple days ago with how I’m feeling, instead of people asking how I am (because I ALWAYS say that I’m good in response), the number one question I’ve been receiving from loved ones and readers and friends is now, “how are you really doing?” And the answer is, okay. Still not back to what I feel is my “usual” self, but we’re getting there 🙂

Sunday night, I made these tacos for dinner and I am absolutely obsessed! It all came together rather randomly and half the time I didn’t know what I was envisioning, but I absolutely love the way these came out. YUM. Super easy weeknight meal & if you’re cooking for 2, there’s leftovers! Yesss. Leftoversss.

The salmon is sweet, with just a touch of kick, and the salsa is super creamy and fresh. To be honest, I called it a salsa because I wasn’t sure what else to call it! Haha. There’s also a hint of tang all over this dish from the lime juice. I love this meal because not only is it tasty, but it’s super healthy, too. And it’s so pretty! Which is obviously what matters most.

Serves 4 



3 salmon filets

1/4 c honey

juice of 1 lime

1/4 c olive oil

1/4 t salt

1/4 t black pepper

1/4 t cumin

for the salsa:

1 avocado, diced

1/2 c basil, cut into ribbons

1/2 c corn kernels

1/2 c diced green bell pepper

juice of 1/2 lime

1/4 c sliced green onions

feta, on the side


Combine the honey, lime juice, olive oil, salt, pepper, & cumin to create a marinade. Place the salmon in a large dish and pour the marinade over the fish and let sit for an hour in the refrigerator.

After the salmon has marinated for an hour, heat a grill pan to 400 and grill the fish on each side for 3-4 minutes, until thoroughly cooked. Shred with a fork for easy taco assembly and set aside.

For the salsa, toss all ingredients together. Bam. Done.

To assemble the fish tacos, layer the fish, salsa, and feta cheese on top of the tortillas and devour. Super simple.
