Monster Cookie Dough Energy Balls

Happy Monday, friends! How goes recovering from the weekend?! I don’t know about you, but I am majorly craving some big salads and smoothies this week! It’s actually going to be kind of a crazy week because I have a lot to get done. Sophie and I leave for Minnesota on Friday! We’re headed back to my “homeland” while Brig takes finals. I’m going to be working on a fun project while I’m there which I can’t wait to share with you guys!! After our Minnesota trip, we’ll meet up with Brig in Chicago to spend Christmas with my mom. December will be a wild month of traveling, but we are so excited!

Anywho – I have been anxious to share these monster cookie dough energy balls with you guys. I am OBSESSED. They are the perfect little snack that satisfy your sweet tooth while keeping hangry at bay. They’re super quick to throw together and only require 5 ingredients – all of which you very likely have in your pantry right this minute! I used the brand Unreal‘s milk chocolate gems (I get them at Whole Foods) but you can obviously use any kind of chocolate candy similar to m&ms.

Although I actually am more of a cookie person as opposed to eating raw dough (it freaks me out, and I just think a warm, gooey cookie tastes better) these energy balls have that cookie dough texture and it is goooooood. Brig is a cookie dough fanatic and really loved these (and he can be hard to please πŸ˜‰ ) What do YOU think is better – cookie dough or cookies?

Tips for my allergy friends: These are gluten-free and dairy-free! If you’d like to make them nut-free, just substitute peanut butter with sunbutter! Easy peasy.

Monster Cookie Dough Energy Balls

Monster Cookie Dough Energy Balls
Serves: about 20 energy balls
  • 1½ c gluten-free rolled oats
  • 1 c natural chunky peanut butter (salted!)
  • ½ c raw honey
  • 1 t vanilla extract
  • ⅓ c chocolate candies
  1. In a food processor, pulse oats a few times to break down just a little bit.
  2. Whisk together peanut butter, honey, and vanilla. Add in the oats and stir to combine. Fold in the chocolate candies. Using a cookie scoop, form the dough into little balls. Store in an airtight container in the refrigerator for up to one week.

    These sound crazy delicious and are waaay too easy! Haha I think I’m gonna have to whip some up this week for sure- I’m still craving sweets despite the Thanksgiving overload. Also, I’m usually like you, more of a fresh-from-the-oven cookie kinda girl, except if I’m going through something stressful or PMSing, I usually just want to eat cookie dough straight from the bowl! Is that weird?
