Healthy Avocado Fudgsicles

You see, once upon a time, I decided to try a recipe for chocolate avocado pudding. “You can’t even taste the avocado,” they said. “Tastes just like normal chocolate pudding,” they said.

Lies.

Now, I’m not about to do the same to you. While these are absolutely DELICIOUS and INCREDIBLE, if you take one bite of a “real” fudgsicle, and one bite of this, you bet your bottom dollar you’ll know there’s a difference. Just being honest here. I got you.

However, I feel that I should mention that these popsicles are Brig-approved, which means that even with the vegetable-ness, they’re still dang fabulous. I triple-dog promise you guys that I’ll never make you something gross. Because, as we’ve discussed, that’s just rude.

And they’re super good for you!!! Yasss. We’re all about that healthy goodness. And there’s only 4 ingredients! Wahoo! Cashew milk, (you can sub with coconut milk or almond milk or even regular milk if it suits your fancy) avocado, cocoa powder, and honey. Bam. Boom. Blang. Bling. Blat.

Makes 10 fudgsicles

Ingredients: 

1/2 a large, ripe avocado

3 T cocoa powder

2 c cashew milk

6 T honey

Instructions: 

Blend all ingredients in a blender until super smooth and there aren’t any chunks. Freeze in a popsicle mold for at least 3 hours until set.
