Okay, so I have some bad news.
In order to make this recipe…you have to sacrifice an entire jar of cookie butter.
I KNOW. It’s totally worth it, but it’s still difficult. Like, you COULD eat the whole jar with a spoon in the corner while watching Parenthood, or you could think about the greater good and happiness and make these blondies that are OUT OF THIS WORLD AMAZING.
These are rich, thick, dense, and chewy. Also perfect. The type of bar you make that’ll woo your suitor and amaze the mother-in-law. We’re talking big here.
I added chocolate chips AND a cookie butter glaze because I couldn’t help myself (per usual). The glaze does make things preeetttyyyy sweet though, so if you’re feeling faint of heart, skip it.
But I mean hey, you could also go crazy & add the glaze. Eat all the sweet things and take no prisoners. (Or maybe take a few of your favorite prisoners – you’ll need some people to share this with)
Go ahead and pour yourself a glass of milk because it’s time to get down and dirty with these bars.

1/2 c unsalted butter, softened
1 c cookie butter,
1 c light brown sugar, packed
1 t vanilla
1/4 t cinnamon
1/4 t salt
2 T milk
2 c flour
2 t baking powder
1 c chocolate chips (optional)
for the glaze: (also optional)
remaining cookie butter in the jar (~1/4 cupish)
1 c powdered sugar
1/4 c – 1/2 c heavy cream (enough to get it to desired glaze consistency)
Preheat oven to 350.
Using an electric mixer or stand mixer with a paddle attachment, cream together the butter & cookie butter. Add in brown sugar and mix until well combined, followed by the eggs, vanilla, cinnamon, and milk.
Mix in the flour, salt, baking powder, and chocolate chips.
The batter will be a bit thick and sticky. Scoop & smooth into a greased 8×8 pan and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
