Haaappy Sunday, friends! Ahhh. I love Sundays.
We are headed back to Utah tonight & I am feeling allllll the mixed feelings! I’m anxious to get back to our normal routine, but not excited at all to leave my family and the beautiful Midwest. But isn’t that how it always goes with vacation? Alas. We are so grateful for the time we’ve been able to spend in Minnesota & North Dakota and have definitely found the peace & relaxation we so desperately needed.
So. This granola. I LOVE GRANOLA. We already established that in this post. There aren’t any nuts in this one, but feel free to add some cashews or almonds or even macadamia nuts if you fancy. This granola is light, crunchy, and almost has a tropical feel because of the coconut & pineapple vibes. Yasss plz. Gimme dat all day err day.
This recipe requires unsweetened dried pineapple, which, truth be told, can be somewhat hard to find. I love the Trader Joe’s brand. Also – the freeze dried bananas from Trader Joe’s?! OH MY LANTA. I’m obsessed. I could eat a bag a day. They. Are. So. Stinkin’. Good.
1/2 c unsweetened, dried pineapple, diced (should be slightly larger than a raisin)
3 c rolled oats
1/4 t salt
1/2 c honey
1/4 c coconut oil
1/4 c unsweetened coconut flakes
Preheat oven to 300.
Combine all ingredients in a large bowl & stir until everything is thoroughly incorporated & evenly coated.
Spread out on a greased sheet pan and bake for about 20 minutes – careful not to burn! Let sit for about half an hour on a wire cooling rack to get crunchy & clumpy.
Enjoy with milk or yogurt!
